Easter is headed our way! For those of us that are trying to be conscious about what we eat, big holidays can be a train wreck. All those tasty casseroles with heavy cream and cream of something soups, the tasty veggies that have been covered in bread crumbs and cooked in heavenly amounts of oil. And don’t forget the candy! Peanut butter eggs, marshmallow bunnies, and everyone’s favorite Peeps. (excuse me while I wipe drool off my chin). If you’re not careful, the calories can seriously add up. Here are a few of my favorite lighter options for Easter. Easy to make, easy to enjoy, and liked by almost everyone!
Fruit Skewers
1/2 cantaloupe
1/2 watermelon
2 bunches of green grapes
1 container strawberries
1 pineapple
2 boxes of Peeps
1 bag of large wood skewers
Clean and cut up fruit. Put fruit on skewers. Add Peeps. Chill in fridge and serve. Super easy and great fun for the whole family! (Pro-tip: do them close to party time because the Peeps will get soggy if you leave them overnight). If you are trying to be healthy, skip the Peep and eat the fruit.
Mini Strawberry Cheesecake Tarts

30 mini-phyllo shells
8 0z. low fat cream cheese
1/4 cup fat free plain Greek yogurt
2 Tbsp sugar
2 tsp fresh lemon juice
1 tsp lemon zest
1 tsp vanilla
Strawberries (or blueberries/raspberries/blackberries) for topping
Preheat oven to 350. Place phyllo shells on a baking sheet and bake until lightly toasted (5 min.). Whisk together softened cream cheese, yogurt, sugar, lemon juice, lemon zest, and vanilla.
Spoon cream cheese mixture into a Ziploc bag and cut off the tip. Pipe the mixture into the cooled phyllo shells. Garnish with sliced berries and serve immediately.
